PHOENIX – The family behind the drive-thru Salad and Go chain has cast its net on another to-go-only dining option: lobster.
Angie’s Lobster in Tempe at Baseline and Hardy roads will feature the ocean crustacean on a toasted and buttered roll with french fries and a drink for $9.99. Walk-up service begins Nov. 30; construction on the drive-thru is expected to be finished next spring.
A wild-caught lobster roll is $9.50 a la carte, while a single fried lobster finger is $2.
The business will only accept debit or credit cards and EBT payments, according to the website.
Tony and Roushan Christofellis said on the website one of the reasons they can offer lobster so inexpensively was because “Our model is about efficiency, we do not chase revenue like everyone else. We chase efficiencies.”
To that end, they have done away with third parties as often as possible, they said, including transporting the Maine and Canadian lobsters themselves.
“We buy visually imperfect lobster, but it tastes the same. We don't mind if a claw is broken, do you?”
The Christofellis plan to open four more locations. After the East Valley makes it debut, a restaurant in Phoenix at Thunderbird Road and 43rd Avenue will start operating in January with walk-up service.
Three others will open in spring – at Pinnacle Peak Road and 19th Avenue in Phoenix; Glendale and 83rd avenues in Glendale; and Signal Butte and Guadalupe roads in Mesa.
The couple founded Salad and Go in metro Phoenix in 2013.
